Hello and Welcome! Today, I have 5 easy, healthy and delicious lunch recipes that are WW (weight watchers) approved. I find lunch is the hardest meal to be creative with but there are so many great ideas that will keep you on track.
These recipes are healthy and filling with large portions so you will be satiated while losing weight. These recipes are all kid approved but fancy enough that you will feel like you’re eating gourmet.

CHICKEN SALAD SANDWICH
1 Can Costco Chicken
2 Slices Little Big Bread
1 Package Guacamole
Squeeze of Mustard
1/2 Tsp each: Garlic Powder, Onion Powder
Seasoning Salt to taste
Dried Dill (optional)
Pickles
Bell Peppers
Spring Mix
Mix all of the ingredients together (except bell peppers and spring mix) and place on top of toasted bread. Enjoy!
PASTA SALAD
2 Chicken Breasts
Pasta
Carrots
Bell Pepper
1 Can of Corn
2 Tbsp Mayo
1/4 Cup Greek Yogurt
Fresh Dill (1 Bunch or to taste)
1/2 tsp Each: Seasoning Salt, Garlic Powder, Onion Powder
Chili flakes (optional)
-Boil Pasta and carrots together until the pasta is tender.
-Cook up the chicken breast while the pasta cooks and once finished, let it rest for 5 minutes, then shred it and add it to the pasta salad.
-Combine all sauce ingredients in a large bowl and add chopped pepper and the can of corn.
Mix to combine everything and enjoy!
GROUND ORANGE CHICKEN
My adaptation…
1Lbs Ground Chicken
1 Tbsp Grated Ginger
3 Grated Garlic Cloves
1/4 Tsp Red Chili Flakes
1 Tbsp Cooking Wine
1/2 Tsp Sesame Oil
1 Tsp Boullion Paste
1 /2- 1 Tbsp Sugar
1 Tbsp Vinegar (more to taste)
Zest of 1 small Orange
Juice of the Small Orange
Thickening agent… 1 TBSP water and Cornstarch mixed well.
1 Cup Dry Jasmine Rice
1 Cup water
Cauliflower rice
Cook the rice either in a rice cooker or on medium heat, covered on the stove. (Rinse the rice off first)
While the rice is cooking, add all the ingredients for the chicken into a pan and cook until done.
Add the cornstarch slurry and cook until thickened.
Layer rice and cauliflower rice in a bowl and top with the ground chicken mixture. Enjoy!
CHILI LIME COUS COUS SALAD
Vinaigrette Dressing
My Adaptation:
A little under 1/4 Cup Olive Oil
The zest and juice of 1 Lime
2 Cloves of grated Garlic
1/2 Tsp Chili Powder
Pinch of Salt1/2 Tsp Maple Syrup
1 Cup Dried Cous Cous
1 Cup Boiling Water
1 Bell Pepper
1 Can of Chickpeas (drained and rinsed well)
2 Grated Carrots
Combine the cous cous and water in a large bowl. Cover to let it cook for 5 minutes.
While it is cooking, dice the peppers and grate the carrots.
Drain and rinse the chickpeas and make the dressing.
Combine all the dressing ingredients into a jar and shake well to combine.
Add everything into the cous cous and give it a mix to combine. Dish up and enjoy!
BLT Sandwich
2 Pieces Little Big Bread
Deli Turkey
1 Slice Bacon
1 Tsp Sriracha Mayo (mayo and sriracha to taste)
Spring Mix
Bell pepper for a side
Toast the bread then top with all the ingredients. Enjoy!
