Hi…Hello..Namaste !!! My name is Sowjanya . Welcome to ” Recipes Redefined”.
Ingredients:
Pumpkin Slices – 2cup
Carrot Slices – 1/2 cup
Onion – 1 (Medium sized)
Bay leaf – 1
Olive oil – 1 tsp
Garlic cloves – 2
Fennel seeds (Saunf) – 1/2 tsp
water – 2 cups
Salt to taste
Crushed Black Pepper – 1/2 tsp
Fresh Cream – 1 tsp (optional)
Procedure :
In a sauce pan Add Oilve Oil and bay leaf and fennel seeds and sauté for a minute.Then add sliced Onions and Garlic cloves ,Saute until onions turns pink.Then add Pumpkin Slices and Carrots slices and sauce for 2 minutes.Then add water and salt and pepper to taste.Cover and cook for 20 minutes in medium flame.By then pumpkin cooked completely .Discard the bay leaf and blend the soup smooth.Ta-Da !!! Healthy & Tasty pumpkin Soup is ready to serve .
Garnish the soup with fresh cream .Yumm…Yumm!!
