Easy Veggies recipe that will surprise all family members. It only takes 30 minutes to prepare this healthy dinner.

Cut 1 big or 2 small eggplants and fry it in the oven. Meanwhile make a nice cup of coffee to brighten your day 😉 When browned take eggplant out of the oven and let it rest. Peel and cut 4 potatoes and fry in the pot with 3 tablespoons of olive oil. Season potatoes with potatoes spices. When golden brown in colour add to the pot 2 sliced onions and 3 cut red paprika. Cover pot and fry until vegetables softens. When softened add to the pot eggplants, 8 minced garlic cloves, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp thyme and 1 tsp dill. Mix and fry for 5 more minutes. Bon appetit!
