Famous ratatouille is a vivid ragout of fresh, fried veggies filled with herbs’ aroma. Serve ratatouille hot or cold, as a main dish or side or as a sauce for rice and pasta. Very delicious!

✅ Ingredients:
• zucchini – 1,1 lb / 500 g
• eggplant – 1,1 lb / 500 g
• bell pepper – 12 oz / 350 g
• tomato – 1,1 lb / 500 g
• onion – 9 oz / 250 g
• garlic – 2 cloves
• olive oil – 5 tbsp
• fresh thyme – 1 tbsp / 5 g
• fresh parsley – 1 tbsp / 5 g
• fresh basil – / tsbp / 5 g
• 2 bay leaves
• ground black pepper – ½ tsp
• salt – 1½ tsp

✅ You will need:
• pan
• carving board
• culinary twine

📙 Preparation:
1. Dice the zucchini, eggplant, bell pepper and onion, cut the tomatoes into wedges and mince the garlic.
2. Bind a bouquet garni of thyme, basil, parsley and bay leaves with a cooking twine.
3. Heat a pan with 2 tbsp of olive oil, add the eggplants and fry over medium heat for 7 minutes stirring occasionally. Take out into a bowl.
4. Add 1 tbsp of olive oil into the pan, then zucchini and fry over medium heat for 5 minutes stirring occasionally. Take out into the bowl.
5. Then fry the bell pepper for 5 minutes over medium heat stirring occasionally, place into the bowl.
6. Add 2 tbsp of olive oil, onion and tomatoes, fry for 5 minutes over medium heat stirring occasionally.
7. Lay back all the fried veggies out of the bowl, add the minced garlic, salt, pepper and stir, lay the bouquet garni on top and cover with a lid. Simmer over low heat for 15 minutes.
8. Serve the ratatouille hot or cold, as a separate dish or side dish to fish, meat or as a sauce to rice or pasta.
