This chickpea salad is so delicious and healthy you will want to make it again! I love chickpea recipes and this is my favourite protein salad recipe made with chickpea and Korean Food notes! I learned this salad from my Korean friend and would like to share it with you as it’s super delicious and very easy to make. The salad is plant based and anyone can enjoy it!

ℹ️ Ingredients:
400g | 15oz chickpeas, rinsed and drained well
1 tbsp oil
1 tsp chilli flakes (I use and prefer Korean pepper powder, the one you would use to make Kimchi)
1 tsp garlic powder
1 ½ tsp smoked paprika
¼ tsp black pepper
¼ tsp salt
2 tbsp maple syrup
1 small lettuce
100g | 4oz cherry tomatoes
1 cup | 125g | 5oz corn
½ red onion
½ avocado
50g | 2oz coriander

ℹ️ Dressing ingredients:
1 tbsp peanut butter
1 tbsp white vinegar
2 tbsp maple syrup
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp ginger paste
2 minced garlic cloves
