Welcome friends! Do you ever have a season of life that is more busy than others? This is a very busy season for me, being the end of the school year. With the busy season often comes me looking for ways to make eating (and cooking) more convenient. Instead of heading out to the fast food restaurant I am preparing some healthy and simple freezer-meal skillet dinners. These are going to make those extra busy evenings so much simpler and they are also very low in Weight Watcher (WW) points if you’re trying to follow the WW plan! My family loves all of these meals and I hope you will enjoy them too!

🍅 INGREDIENTS 🍅
Healthy Italian Ground Turkey Skillet:
1 lb ground turkey
½ tsp salt
¼ tsp pepper
2 tsp italian seasoning
1 tsp crushed red pepper flakes
1 c cherry/grape tomatoes halved
1 c zucchini noodles
1 c green beans diced
1 can cannellini beans; drained & rinsed
2 tbsp pesto sauce
3 tbsp tomato sauce
*med-high heat
*20-25 mins
*options: serve over angel hair pasta
Southwest Taco Skillet:
1 lb ground turkey
½ tsp southwest chipotle seasoning, salt & pepper
8 oz tomato sauce
1 can pinto beans; rinsed & drained
1 c zucchini noodles
1 ½ tbsp chopped pickled jalapeno (or 1 chopped fresh jalapeno)
*med-high heat
*20-25 mins
*options: serve over rice, in a tortilla, over tortilla chips
Turkey Sausage & Veggie Breakfast Scramble:
1 lb ground turkey
¼ tsp salt, pepper, thyme, paprika, & cayenne
1 red bell pepper diced
1 c spinach chopped
1 med-large potato; cooked in microwave; cut into 1” pieces
*med-high heat
*20-25 mins
*add 2 eggs
*options: roll in a tortilla, serve with salsa and avocado
Low Carb Green Chili Turkey Skillet:
1 lb ground turkey
½ tsp salt
¼ tsp pepper
12-16 oz jar salsa verde
1 c zucchini noodles
1 can diced green chilis
*med-high heat
*20-25 mins
*options: serve over rice, sweet potato, w/a tortilla
