Who doesn’t love a yummy bowl?! This one is super easy. Here’s how:
1. Chop veggies and chicken into cubes (or skip chicken for vegetarian version)
2. Combine olive oil with lemon pepper seasoning + thyme and a little red pepper (or any seasoning you like), then drizzle over the veggies and chicken in one big bowl and mix well. (I didn’t measure the seasoning, just eyeballed it and it came out really well! But it was about 3 tbsp olive oil and 1.5 tbsp lemon pepper with sprinkles of the other spices)
3. Bake at 400 for 25 min.
4. Start your bowl with quinoa, then add the some of the chicken & veggies mixture. Optional : top with sliced cucumbers and some feta cheese.
