Ingredients
For the salad:
• 1 cup raw boneless, skinless chicken breasts, Boiled & cut into
2 1/2-inch chunks
• 1/2 red bell pepper, seeded and chopped
• 1/4 cup onion rings
• 1/3 head iceberg lettuce, sliced
• 1/2 cup boiled sweet corns
• 1/2 cup blanched broccoli
• 1 English Cucumber sliced
For the dressing:
• 2 tablespoon thousand Island dressing (optional)
• 5 teaspoons freshly squeezed lemon juice
• Salt and pepper to taste
• Herbs & Chilli Flakes
