Being a mother i am always in hunt of super quick plus healthy snacks.
These make-ahead bars are too good to be true :). My mother in law gave me inspiration to make these energy bars to warm up our bodies and souls to go through Scandinavian winters.

Ingredients:
1 cup rolled oats
1/2 cup peanuts
1/2 cup cashew nuts
1/4 cup shredded coconut
1 tbsp black sesame seeds
6 large dates (without seeds)
3 tbsp honey
3 tbsp dates syrup
2 tbsp peanut butter
METHOD:
In a baking tray spread the peanuts on a baking paper , and bake for 5-7 minutes in a preheated oven at 180°C, until lightly golden and fragrant,
Similarly spread the cashew nuts on a baking paper , and bake for 5-7 minutes in a preheated oven at 180°C, until lightly golden and fragrant,
Once peanuts are cooled, pick up handfuls at a time and rub between your palms so the skin falls off.
In a food processor, Add, 1 cup of the oats and roasted peanuts and grind coarsely.

Blend honey ,date syrup ,dates and peanut butter very well to make a sticky mixture.
In a large bowl, add ground oats, peanuts and cashew nuts. Also add dates,honey and peanut butter mixture.
when ground oats ,nuts and date mixture is blended well add coconut and sesame seeds
Its completely optional to add little cinnamon , for me cinnamon always works in such granola bars.
Press the mixture into the baking pan, in a shape of rectangle square. you can use small pan .
Bake until lightly golden, about 10-15 minutes.
Cut into bars and let cool .
