Ingredients:
1. Chickpeas – 1 cup (125 gms)
2. Diced Apple – 1 Cup (100 gms)
3. Diced Cucumber – 1 cup (100 gms)
4. Grated Carrot – ¼ Cup (50 gms)
5. Diced Onion – ¼ Cup (50 gms)
6. Diced Tomatoes – ½ Cup (100 gms)
7. Finely Chopped Green Chilies – 3 (20 gms)
8. Finely chopped Cilantro – 10 gms
9. Finely chopped Mint – 10 gms
10. Lemon – 1
11. Black Pepper – 1 tsp
Method:
1. Thoroughly rinse and soak the chickpeas for about 8 hours
2. Transfer the soaked chickpeas in a pressure cooker and cook for 4 whistles on a high flame and let the chickpeas cool down in the cooker without opening the lid. This makes the chickpeas softer.
3. Strain the water and transfer the cooked chickpeas into a mixing bowl.
4. Add some tomatoes
5. Diced cucumber
6. Diced Onion
7. Grated Carrots
8. Diced Apple
9. Finely chopped Green Chilies.
10. Finely Chopped Cilantro
11. Finely chopped Mint Leaves
12. Sprinkle some black pepper
13. And finally squeeze a lemon
14. Mix the Salad well with spoons and enjoy the deliciously healthy chickpea salad
