Hot Honey Chicken and Rice w/ Guacamole. Low calorie, high protein, great for meal prep, and packed with TONS of flavour. Done in under 25 minutes.ππΌ

Chicken:
β’ 2 chicken breast (about 145g each breast)
β’ 1 tsp olive oil
β’ season with salt, pepper, garlic powder, paprika and chili powder

Guacamole:
β’ 1 small avocado
β’ 1/2 chopped tomato
β’ 1/2 chopped onion (red or white)
β’ squeeze of half a lime
β’ season with a pinch of salt and garlic powder
OPTIONAL: chopped jalapeno

Hot Honey Sauce:
β’ 1 tbsp honey (or low calorie maple syrup)
β’ 2 tsp hot sauce (I use sriracha)
β’ 1-2 tbsp light mayo (or fat free greek yogurt)
β’ squeeze of half a lime

Rice:
I use 1/2 cup uncooked Brown or White Rice, which yields approx. 1 and a half to 2 cups of cooked rice. Served with chopped cilantro or parsley.

NOTES: If you choose to meal prep, seperate the guacamole and the chicken. That way, you can serve the guacamole at room temperature and heat the chicken on its own w/ the rice or your choice of carb. Apart from rice, this recipe works well on wraps and sandwiches too.
