Apple Raisin Bran Scones
Ingredients
1 1/2 cups all purpose flour
1/2 cup bran flakes (not cereal)
3 tablespoons sugar (I used golden cane sugar)
1 1/2 tablespoons baking powder
1/2 teaspoon salt
6 tablespoons extra virgin olive oil
1/2 cup sour cream (or cream, buttermilk)
1 extra large egg
1/4 cup raisins
1 teaspoon pure vanilla essence
1/2 a large apple grated, skin on (I used ambrosia)
Method
Preheat oven to 400F and place a rack on the second slot from the top. Grease a baking sheet and set aside. Whisk or sift the flour baking powder salt. Whisk in the sugar and bran. In a separate bowl, beat the egg, add in the oil, sour cream and vanilla and stir to combine. Add the raisins and apple to the flour and stir it in. Add the egg mixture and make a soft dough. Handle the dough very lightly. This is a very soft and light dough. Bring together on a floured surface, shape into a circle, pat down evenly to about an inch to an inch and a half thickness. Slice into eighths. Place on a greased tray. Brush with beaten egg using a pastry brush and bake for ten to twelve minutes until golden brown. Cool on a cooling rack. Serve with butter, jam, marmalade or preserves of choice, and/or whipped or clotted cream or opt for an healthier option and have it plain or use some low calorie homemade fruit or berry sauce. These are great for a grab n go breakfast, snack or tea/coffee time treat.
Notes
These are high fibre, heart-healthy, scones when enjoyed on it’s own. Made with freshly harvested orchard apples from local 🇨🇦 orchards, olive oil instead of butter and bran for high fibre. Make some minis to go into kids lunch box snacks.
