recipes:
Greek Chicken Pasta Salad
sear chicken for 2 mins each side on high. cover and lower heat for 8 mins. turn off heat and let steam cook for 10 mins do not remove the lid. chop cherry tomato, cucumber, kalamata olive, add capers, feta, and a drizzle of olive oil red wine vinegar, fresh dill, avocado, and sprinkle with dried oregano. toss everything with brown rice pasta and serve with chicken!
Avgolemono Soup
8 cups of chicken broth
2 cups of water
1 peeled onion
4 peeled garlic cloves
1 whole carrot
2 celery sticks
1 tbs salt
2 chicken breast
1/2 cup rice
2 egg yolks
juice of 2 lemons + zest of one
fresh chopped parsley
add all veggies to your liquid and boil. once boiling add chicken and reduce heat to medium and simmer for 40 mins. after 40 mins take out the whole veggies plus the chicken and shred the chicken and set it aside. put the whole veggies in a blender with some of the broth in the pot blend and put it back into the soup pot. add the rice and let cook, about 15 mins. once cooked take soup off the heat. in separate bowl add egg yolks, zest, juice of lemons. slowly add the broth from the soup and whisk vigorously so the eggs can come up to temp without breaking. add back into the soup and top with fresh parsley enjoy! it’s the best 🙂
