Smoky Quinoa with mushrooms and cornRecipe1 cup of quinoa2 cups of water150 grams of mushrooms1 corn on the cobbunch of coriander1 1/2 tsp of ginger1 1/2 tsp of smoked paprika2 cloves of garlic1 tbsp of olive oil1/2 tsp of cayenne2 tbsp of nutritional yeast1 tbsp of apple cider vinegar1 tsp of maple syrupPreparationMince the garlic and sauce it in olive oil till fragrant, add ginger and paprika and continue frying for another 30 secondsAdd sliced mushrooms and cornSeason with salt and pepperCook for another 2-3 minutes until mushrooms start to softenAdd quinoa, give everything a stir so quinoa gets coated with all the spices and flavours, season with salt and pepperAdd 2 cups of water and cook till quinoa is fluffy(about 15 minutes)Sprinkle over chopped coriander, nutritional yeast, apple cider vinegar and maple syrupTaste and adjust seasonings if neededServe with avocado, extra coriander and lime wedges

Coconut quinoa with paleo granolaFor paleo granola50 grams of nut mix(I used almond and hazelnuts)2 tbsps of desiccated coconut 2 tbsp of mix seeds(I used pumpkin, linseeds and sunflower)2 tbsp of maple syruppinch of saltPreparationAdd nuts to the pan and toss for 1-2 minutes on the medium heat until just starting to brownAdd coconut and seed mix, continue cooking for another 30 seconds, moving the content of the pan constantlyPour over the maple syrup and sprinkle with saltCook for 1 minute longer, stirring often, transfer to the lined baking sheet to crisp up even moreFor coconut quinoa1/2 cup of quinoa 3/4 cup of water1 cup of coconut milk1 tbsp of desiccated coconut1 tbsp of mixed seeds1 tbsp of maple syrup(or to taste)pinch of saltPreparation Combine quinoa with water and a pinch of salt, bring to boil and cook for 10 minutesAdd coconut, mixed seeds, coconut milk, maple syrup and cook for 5 minutes longerServe with paleo granola, banana and splash of coconut milk if desired
Mediterranean quinoa1 aubergine1 zucchini1 red onion2 garlic cloves1 1/2 cup of quinoa3 cups of water1 tbsp of mixed herbs2 tbsps of balsamic vinegar2 tbsps of olive oil basil to servePreparationAdd 1 tbsp of olive oil to the pan and saute sliced onion and minced garlic till fragrantAdd chopped aubergine, season with salt and pepper and follow with a splash of water to deglaze the panCook for 2-3 minutes till it starts to brownAdd chopped zucchini and tomatoes to the pan and season them with a pinch of saltCook for 2 minutes longerAdd quinoa and stir everything togetherCover quinoa with water, bring to boil and cook for about 12-15 minutes till quinoa is fully cooked and fluffy(add a splash more water if the liquid starts to evaporate too quickly)Sprinkle mixed herbs over, add balsamic and extra tbsp of olive oil Taste and adjust seasonings if neededServe with fresh basil
