Welcome back to La Vacca Farm Stay.
Today I’m trying to thank the crew from Ancient Landmark Fence. It’s so hot here and they’ve been working hard to get my fence built. This fence means a lot to me, it’s not a barrier to keep people out, but a protection to keep my future pets in. The fence is turning out to be much more beautiful than I imagined (and I had high hopes!)
Now here’s the problem, I don’t eat meat and haven’t for most of my life. My forte is not preparing chicken for a chicken salad sandwich but making its vegetarian counterpart-chickpea salad is something I love. I want to serve something that I know how to make and enjoy rather than trying to fake it and make something gross!
This chickpea salad sandwich is lemony, bright, and delicious. It’s got all the flavors of a chicken salad sandwich but the chickpeas are a healthy source of plant-based protein and a boost of fiber. Chickpea salad sandwiches are excellent for vegans, vegetarians, and even meat eaters. I’m the only vegetarian in my household but when I make this (or any of my other chickpea-based recipes) I better eat fast if I want to get any. My family loves them. They are good and good for you! Even the fence crew seemed to really enjoy them! Ahhhh…that made me happy (I was honestly nervous).
Over the years, this delicious chickpea “chicken” salad has become a staple in our house and is easy to make. This is a great dish whether you are a vegan, vegetarian, or just want to try a tasty meatless lunch!
You can soak your chickpeas overnight and cook them on simmer for about an hour or you can simply pop open a can of chickpeas. The chickpea salad can be prepared a day or two ahead and chilled. Any leftover salad makes a delicious dip! Chickpeas salad sandwiches are not only popular because they offer healthy, plant-based nutrition, but chickpeas have a place in almost any diet.
