The tastes of the fall season inspired our Apple Pecan Spinach Salad! It’s quick, easy to make, and perfect to be enjoyed in Autumn (enjoy it with leftover Thanksgiving turkey). This salad is also low calorie and great to add to your weight loss routine.
APPLE PECAN SPINACH SALAD
5 Oz. Baby Spinach
1 Apple, Thinly Sliced
1/2 Cup Pecans
2 Oz. Feta Cheese
1/4 Cup Dried Cranberries
For Salad Dressing:
1/4 Cup Canola Oil
1/8 Apple Cider Vinegar
1 Tablespoon Honey
1 Tablespoon Dijon Mustard
Salt and Pepper (To Taste)
COMBINE the oil, vinegar, honey, mustard, salt, and pepper. Whisk and set aside.
ADD the spinach, apple, pecans, cheese, and cranberries and mix.
COVER with the salad dressing and mix.
