Craving a healthy and flavorful meal? Try this amazing air fried green pepper boat/green capsicum stuff with chicken minced recipe, inspired by Dable Kwan’s air fryer recipe book! Ingredients:
– 3 small size green capsicums or 12 finger sizes ones (preferred)
– 500gm of chicken (minced)
– 2 small carrots (chopped)
– 1 medium size onion (chopped)
– 1-2 stalks of spring onions (chopped)
– 2 tbsp of light soya sauce
– 2 tsp of corn starch
– 2 tsp of sesame oil
– Salt and pepper to taste
Directions:
1. Mix all ingredients well
2. Cut capsicums in halves and remove seeds
3. Stuff the capsicums with the chicken mixture
4. Air fry for 15 minutes at 180ºC / 355ºF (10-12 minutes for finger size capsicums)
5. Sprinkle with fresh chopped coriander (optional)
6. Remove and serve hot with your favourite sides or on its own as a low calorie meal.
