INGREDIENTS (Serves 2) – 448 Calories per portion
100g New Potatoes cut into quarters
1 tsp Toasted Sesame Oil
1 Onion finely sliced
2 Garlic Cloves or Lazy Garlic
Red Chilli Flakes
3 tbsp Thai Green Curry Paste
400ml Light Coconut Milk
2 Chicken Breasts cut into chunks
100g Beansprouts
Handful of Baby Spinach (fresh or frozen)
Juice of 1/2 Lime
1 tsp Fish Sauce
