VEG-BRIYANI
Ingredients:
1 cup basmati rice, soaked for 30 minutes and drained
2 tablespoons ghee or oil
1 large onion, sliced
2 cloves garlic, minced
1 inch piece of ginger, minced
1 green chili, chopped (optional)
1 cup mixed vegetables (such as carrots, peas, green beans, cauliflower)
1 teaspoon cumin seeds
2 bay leaves
2 cloves
2 cardamom pods
1 cinnamon stick
1 teaspoon turmeric powder
1 teaspoon red chili powder (optional)
Salt to taste
2 cups water
1/4 cup chopped fresh coriander leaves
Instructions:
Heat the ghee or oil in a large earthen pot over medium heat. Add the cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick, and sauté for a minute until fragrant.
Add the sliced onions, garlic, ginger, and green chili, and sauté until the onions are soft and translucent.
Add the mixed vegetables and sauté for a few minutes until they are slightly tender.
Add the drained rice to the pot and stir well to coat with the vegetable and spice mixture.
Add the turmeric powder, red chili powder (if using), and salt to taste. Mix well.
Add the water and stir gently. Bring to a boil over high heat, then reduce the heat to low and cover the pot with a lid.
Cook the biryani on low heat for 15-20 minutes, or until the rice is fully cooked and the water has been absorbed.
Once the biryani is cooked, remove the pot from the heat and let it sit for 5-10 minutes. Then, fluff the rice with a fork and garnish with chopped coriander leaves.

250 grams paneer, cut into cubes
2 large onions, sliced
1 teaspoon cumin seeds
1 teaspoon ginger paste

2 green chilies, chopped
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 cup tomato puree
1/2 cup milk
2 tablespoons ghee or oil
Salt to taste
1/4 cup chopped coriander leaves
Instructions:
Heat the ghee or oil in a large earthen pot over medium heat. Add the cumin seeds and sauté until they start to splutter.
Add the sliced onions and sauté until they are soft and translucent.
Add the ginger paste, garlic paste, and chopped green chilies, and sauté for a minute until fragrant.
Add the coriander powder, cumin powder, turmeric powder, and red chili powder, and mix well.
Add the tomato puree and cook for 2-3 minutes until the raw smell of the tomato goes away.
Add the paneer cubes and mix well. Add salt to taste.
Add the milk and bring the mixture to a boil over medium heat.
Reduce the heat to low and let the paneer cook in the gravy for 5-7 minutes, stirring occasionally.
Once the paneer is cooked, turn off the heat and garnish with chopped coriander leaves.
Serve the paneer do pyaza hot with rice, naan, or roti.
