Ragi Veggie Soup that incorporates:

Ragi Veggie Soup Ingredients:

– 1/4 cup ragi (finger millet) flour + water (to make slurry)
– 1/4 cup carrots, chopped
– 1/4 cup peas
– 1/4 cup cauliflower florets
– 1/4 cup capsicum (bell pepper), chopped
– 1/4 cup corn kernels
– 1/4 cup tomatoes, chopped
– 2 cloves of garlic, minced
– 1 Tablespoon oil
– Salt, to taste
– Black pepper, to taste
– Magic Maggie masala (optional)
– Water, as needed
– Fresh coriander leaves, chopped (for garnish)

Ragi Veggie Soup Instructions:

– In a small bowl, mix the ragi flour with some water to make a slurry. Keep it aside.
– Heat the oil in a saucepan over medium heat.
– Add minced garlic and sauté until fragrant.
– Add all the vegetables and sauté for a few minutes.
– Add salt and black pepper, to taste.
– Add water to cover the vegetables and bring it to a boil. Let it simmer for 10-15 minutes or until the vegetables are cooked.
– Add the ragi flour slurry to the soup and stir well to avoid any lumps.
– Let the soup simmer for another 5-7 minutes or until it thickens slightly.
– Add Magic Maggie masala (if using) and adjust seasoning as per taste.
– Serve hot garnished with chopped coriander leaves.
