Ingredients:
Slices of bread
Chopped onions

Salt to taste
Black pepper powder
Red chili powder

Instructions:
In a bowl, mix the boiled and mashed potatoes with chopped onions, bell peppers, tomatoes, coriander leaves, salt, black pepper powder, and red chili flakes. You can also add grated cheese for extra flavor.
Take slices of bread and spread a generous amount of the potato mixture on one side of each slice.
Heat a pan or griddle over medium heat and spread some butter on it.
Place the slices of bread with the potato mixture facing down on the pan and cook until the bottom side turns crispy and golden brown.
Flip the sandwich and cook the other side until it’s crispy and golden brown as well.
Once both sides are cooked, remove the sandwich from the pan and let it cool for a minute.
Cut the sandwich into halves or quarters for easy serving.
