Ingredients

Green Masala Paste
– Coriander Leaves – 1/2bunch
– Mint Leaves – 1/4bunch
– Green chilli – 6-7nos
– Garlic Pods – 5-6
– Ginger – 2pieces
– Oil/Ghee 1-2tbsp
– Curry Leaves Few
– Water (For Paste)

For Coriander Rice
– Cooked Rice
– Onion – 1no (Chopped)
– Salt to Taste
– Mustard Seeds – 3/4tsp
– Curry Leaves Few
– Ghee/Oil – 2-3tbsp
– Roasted Cashew Nuts (Garnish)

Method

1) Heat oil in a pan, add green chili, mint leaves, garlic, ginger, curry leaves and coriander. Sauté it well.
2) Once the mixture is cooled , grind into fine paste by adding little water.
3) Heat oil/ghee in a kadai, add mustard seeds and curry leaves. Allow to pop mustard seeds. Add onion and saute transluent.
4) Add coriander paste and salt. Cook for 2-3minutes.
5) Add cooked rice on low flame and mix it well. And cook for 2-3 minutes. Garnish with cashews.

Serve Hot
