Warm Three Green Salad

Broccoli, mangetouts and beans are bursting with vitamins and minerals, but so too are the sesame seeds which top them – and they contain protein too. Serve warm as a vegetable, cold as a salad. For a vegetarian main course, serve with rice or another grain.

Serves 4

Preparation time: 10-15 minutes Cooking time: about 5 minutes

Ingredients:
– 1 head of broccoli
– 125 g (4 oz) mangetouts salt and freshly ground black pepper
– 125 g (4 oz) fine green beans
– 4 spring onions
– 2 tablespoons toasted sesame seeds, to serve

Dressing:
– 2.5 cm (1 inch) piece of fresh root ginger
– 1 garlic clove
– 75 ml (2 fl oz) sunflower oil
– 3 tablespoons rice vinegar

Steps & Process:
1. First make the dressing. Finely grate the ginger and crush the garlic. Place in a bowl and mix together with the back of a spoon to form a paste. Whisk in the oil and vinegar.

2. Cut the broccoli into small florets. Top and tail the mangetouts and beans. Cook the broccoli in a saucepan of salted boiling water for 4 minutes, the mangetouts and beans in a separate pan of salted boiling water for 2 minutes. Drain well and turn into a bowl.

3. Thinly slice the spring onions on the diagonal, add to the vegetables and pour the dressing over the top. Add salt and pepper to taste and toss gently to mix.

To Serve:
Turn the vegetables into a serving dish and sprinkle with the sesame seeds. Serve warm.

Chef’s Tip:
You can use the familiar kind of blue-green broccoli, called calabrese, which has tight, firm florets branching off a thick central stalk or you can use sprouting broccoli, which is smaller and looser and often has purple heads. Chinese sprouting broccoli, available from oriental stores, is another choice, and it would go well with the Chinese flavourings in this dish.
