Healthy chickpea and vegetable pasta salad is light, but packed with flavor and protein. This dish features protein pasta, chick peas, cucumber, cherry tomatoes, red onion and fresh herbs.
INGREDIENTS
🔹1 cup boiled chickpeas
🔹1 cup boiled pasta of your choice
🔹salt as per taste
🔹1/2 tsp black pepper powder
🔹1/2 cup chopped cucumbers
🔹2 tbsp chopped carrots
🔹1/3 cup chopped tomatoes
🔹2 tbsp chopped olives
🔹1/3 cup sliced onion
🔹2 tbsp chopped capsicum
🔹1 tsp chopped mint leaves
🔹1 tbsp lemon juice
🔹1/3 cup shredded cheese
🔹1/8 cup thousand island dressing
INSTRUCTIONS
🔸in a bowl add all the ingredients mentioned. Mix everything well. Serve immediately.
