Ingredients:-
For dressing:
2 cloves garlic
2 red Thai chili
1 tbsp lime juice
2 tbsp palm sugar/ jaggery/ brown sugar
1 tbsp soy sauce
2 tbsp sesame oil
2 tsp sliced spring onion (white part)
1 tsp salt
1 tsp chili sauce (optional)
For salad:-
2 raw or ripe mangoes (or combination of both) thinly sliced
1 cup shredded carrot
1/2 cup shredded white cabbage
1 cup purple cabbage
1/2 cup thinly sliced red bell pepper
1/2 cup cherry tomatoes halves
1/2 cup sliced green onions
1/4 cup chopped cilantro
2 tbsp roughly chopped mint leaves
1/2 cup roasted and crushed peanuts
1/2 tbsp roasted white sesame seeds
Mint leaves for garnishing
Method:-
Using a pastel and mortar mash garlic cloves and chili. In a large mixing bowl make the dressing by adding the garlic chili paste and all the other dressing ingredients and whisk everything well. Now combine all the veggies, herbs and seeds with the dressing, toss everything well. Place the salad on a serving plate and garnish with mint leaves. Enjoy!
