ingredients:
oil
1 onion
1 capsicum
1/2 tsp crushed garlic
1 box mushrooms of your choice
1 cup spring onions
1/2 tsp salt
1/4 tsp pepper
1/4 tsp oregano seasoning
1/4 tsp chilli powder
few boiled eggs
1/2 cup fresh herbs spring onions/ coriander / parsley
1 cup mozzarella cheese
for the batter:
1 raw egg
2 tbsp all purpose flour
1 cup milk
method :
1 Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
2 Add the bell pepper and mushrooms salt , pepper , oregano and red chilli powder to the skillet and cook until they are tender .
3 place boiled eggs cut in halves on top and sprinkle spring onions/coriander and allow the juices in the pot to dry .
4 in a separate bowl make a thick batter with egg , flour and milk n salt. pour over the eggs and mushroom evenly.
5 close the lid and let it cook and bind together like a pancake.
6 add shredded mozzarella cheese on top and close the lid.
7 allow the cheese to melt beautifully .
8 you may season it with pizza seasoning .
