Tropical Quinoa Salad

Ingredients:

1 ½ cups of quinoa, cooked
1 ½ cups of black beans, cooked
1 medium mango, cut into cubes
½ small red onion, finely chopped
2 tablespoons coriander (cilantro), chopped
Juice of 1 lemon
1 tablespoon of olive oil
1 teaspoon salt
½ teaspoon black pepper
1 Hass avocado, cut in cubes

Preparation:

In a large bowl, add the quinoa, beans, mango, onion, cilantro, lemon juice, oil, salt and pepper and mix well. Add the avocado and mix lightly until all the ingredients are combined. Cover the bowl with plastic wrap and chill for 30-45 minutes before serving.
