Vegan Mushroom Curry Pasta Recipe:
For the Sauce:
Cashew – 1 Cup
Water – ½ Cup
Garlic – 4 Cloves
Salt – ¾ tsp
Pepper powder – ¼ tsp
Turmeric Powder – ¼ tsp
Garam Masala – ¼ tsp

Other Ingredients:
Penne Pasta – 2 Cups
Water – For Boiling
Salt – 1 tsp
Oil – 3 tbsp
Onion(Finely Chopped) – 1 no
Italian Seasoning – ½ tsp
Mushroom(Sliced) – 200 g
Bell Pepper (Diced) – ½ no
Baby Corn (Diced) – ½ Cup
Water – 2 Cups
Coriander Leaves(Finely Chopped) – 1 Tbsp

Instructions:
1. Boil the pasta according to the package instructions run it in cold water and set aside
2. In a mixer jar add all the ingredients for the sauce and blend it into a smooth paste
3. In a pan pour oil, add mushrooms and saute for 3 minutes until it develops colour, sprinkle the italian seasoning and saute.
4. Add diced baby corn and saute for 2 more minutes, then add the blended sauce pour water and cook for 3-4 minutes until the raw flavour disappears.
5. Add the bell pepper and onion, saute for another minute then add the boiled pasta
6. Cook for 1 minute and turn off the flame, finish with chopped coriander leaves and serve hot.
