Inspired by the classic French Nicoise salad, this is my take on a healthy dinner or lunch. Packed with greens and flavour, you won’t believe it when your family will ask for more!

Ingredients:

For the salad:
500g new baby potatoes
100g radishes
200g cherry tomatoes
150g asparagus
200g green beans
5 eggs
100g olives

flaked almonds and fresh parsley for garnish

Mustard dressing:

2 tablespoons of white wine vinegar
1 tablespoon of wholegrain mustard
100ml extra virgin olive oil
salt and pepper
