Ingredients:
2 medium-sized zucchinis
1 red bell pepper
1 yellow bell pepper
1 small red onion
2 tablespoons olive oil
Salt and pepper to taste
1 cup hummus
Fresh basil leaves
Optional: additional fillings like avocado slices or feta cheese
Instructions:
Preheat your grill to medium-high heat.
Wash the zucchinis and trim off the ends. Cut them lengthwise into thin, even strips, about 1/4 inch thick. Set aside.
Slice the red and yellow bell peppers into thin strips. Cut the red onion into thin slices as well.
In a large bowl, toss the zucchini strips, bell pepper slices, and red onion slices with olive oil. Season with salt and pepper to taste, making sure all the vegetables are evenly coated.
Place the marinated vegetables on the preheated grill. Cook for about 2-3 minutes per side, or until they are tender and have nice grill marks. Remove from the grill and let them cool slightly.
Once the grilled vegetables have cooled, it’s time to assemble the wraps. Take one zucchini strip and spread a thin layer of hummus over it. Place a few fresh basil leaves on top of the hummus.
Add a few grilled bell pepper and red onion slices on top of the basil leaves. If desired, you can also add additional fillings like avocado slices or crumbled feta cheese.
Gently roll up the zucchini strip, starting from one end. Secure it with toothpicks if needed. Repeat this process with the remaining zucchini strips and fillings.
Serve the grilled zucchini wraps immediately or refrigerate them for later. They can be enjoyed as a light lunch or appetizer.
Note: You can get creative with the fillings and use other vegetables or spreads of your choice. These wraps are also delicious when served with a side of tzatziki sauce or a squeeze of lemon juice.
