This creamy vegan broccoli salad makes a perfect weekday lunch idea for healthy meal prep or as side dish to any BBQ or party this summer and its SO to throw together!

Creamy Vegan Broccoli & Grape Salad
Dressing:
1/2 cup raw cashews
6 oz filtered water
1 tbsp apple cider vinegar
1 tsp pink Himalayan sea salt
1 large pitted medjool date
1/4 of a medium garlic clove (I just cut a small slice)
Salad:
*Seedless Red Grapes, about 1.5 cups, sliced
*Broccoli 3-4 cups, chopped small
*Red onion or shallot, minced, about 1-2 tbsp depending on your preference (soaked in water 5 minutes)
*Dried cranberries or raisins about 1/4 cup, chopped
*Sliced almonds, about 1/3 cup
*Fresh cracked peppercorn I did at least 15-20 grinds (important to use freshly ground not pre-ground peppercorn to get the flavor want!)
