The recipe for Afghani Pulao typically involves cooking basmati rice with lamb, raisins, carrots, and a blend of spices. Here is a simple recipe:
Ingredients:
– 2 cups basmati rice
– 2 lbs lamb meat
– 2 cups chopped carrots
– 1 cup raisins
– 1 tbsp coriander seeds
– 1 tbsp cumin seeds
– 1 tbsp cardamom pods
– 2 cinnamon sticks
– 1 tsp black peppercorns
– 1 tsp salt
– 1/2 cup vegetable oil
– 4 cups water
Directions:
1. Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
2. In a large pot, heat the vegetable oil over medium heat. Add the lamb meat and cook until browned on all sides.
3. Add the carrots, raisins, coriander seeds, cumin seeds, cardamom pods, cinnamon sticks, black peppercorns, and salt to the pot. Cook for 5 minutes.
4. Drain the rice and add it to the pot. Stir to combine with the lamb and vegetable mixture.
5. Add the water to the pot and bring to a boil. Reduce the heat to low and cover the pot. Cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
6. Remove the pot from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
