I found this recipe in Magnolia Bakery’s cookbook and made a twist!
As a Japanese, I grew up eating Mochi with red bean paste in it; that my normal snack, but I really wanted to eat this strawberry cheesecake because it looks so gorgeous!
Has a light texture, something in between NY cheesecake and Japanese Cheesecake. Finished off with a tangy strawberry topping,
you will definitely love it!
21cm(8inch) spring form pan
Crust
450g(1lb) Graham cracker
200g (8oz) unsalted butter
50g (2oz)toasted walnut
Filling
225g(1/2lb) Cream Cheese
60g (2 oz) Sugar
3/4 cup (200ml) whole milk
2 large eggs
1 ts vanilla
1 ts lemon zest
Strawberry Sauce
200g(7 oz) strawberry
30g (1 oz) sugar
1 ts corn starch
