Ingredients:
• Whole Wheat Flour/Atta – 1 cup
• Salt to taste
• Oil – 1 tsp
• Water
• Brown Rice – 1/4 cup
• Cajun Seasoning – 1 tbsp (1/2 + 1/2)
• Capsicum, Tomato, Onion – 1 pc each
• Ginger & Garlic – 1/2 tsp each
• Green Chilli – 1 pc
• Boiled Corn – 1/4 cup
• Paneer – 1/2 cup
• Handful Coriander Leaves
• Lemon Juice
• Hung Curd – 2 tbsp
• Boiled Rajma (Optional)
Recipe:
1. Knead a dough using atta, salt, oil and water. Coat with oil and let it rest for 10 mins.
2. After 10 mins, take small portions of the dough, roll it out and cook properly from both sides.
3. Soak brown rice for 1 hour and then boil it in hot water with some salt.
4. Once the brown rice has cooked, spread them out on a surface. Season them with cajun powder/seasoning.
5. For Pico de Gallo: Chopped capsicum, tomato, green chilli, onion, ginger, garlic, paneer, boiled corn, salt, pepper, cajun seasoning, lemon juice and coriander leaves.
6. For dressing: Hung curd and cajun seasoning.
7. Assemble your burrito with the dressing, pica de gallo, boiled rajma (optional) and rice.
8. Toast it on a pan with some oil and enjoy!
