Ingredients:
3/4 cup of balsamic vinegar
1/2 tablespoon of honey (optional)
3-4 medium ripe tomatoes
400g of fresh mozzarella cheese
A handful of fresh basil leaves
Salt and pepper to taste
Extra virgin olive oil
Instruction:
1. n a saucepan, pour 3/4 cup of balsamic vinegar and add 1/2 tablespoon of honey (optional). Honey adds sweetness, but the recipe works without it as well.
2. Bring the mixture to a low boil and then reduce the heat to a simmer. Stir occasionally and let it simmer for about 12 to 15 minutes until the vinegar is reduced by half and coats the back of a spoon. Keep in mind that the glaze will thicken further as it cools. The final result should be about one-third cup of balsamic glaze.
