Snacks are life, let’s get one thing straight. I’m the snack QUEEN y’all— and I actually recommend regular protein-rich snacks for better blood sugar and happier PCOS symptoms 🙏

Not only are these incredibly yummy Lemon Poppyseed Energy Balls super simply to throw together, they’re full of protein, fiber, iron, and Vitamin C so your hormones will LOVE them 🍋 Just 5 ingredients and they store great in the fridge for meal prepping purposes!

INGREDIENTS:
•1 cup almond flour
•7 Tbsp fresh lemon juice + 1 tsp grated lemon zest
•3 Tbsp liquid sweetener (I used liquid allulose but honey and maple syrup could work too!)
•1/2 Tbsp poppyseeds
•5 Tbsp water
•1/4 cup coconut flour

DIRECTIONS:
1) Mix all ingredients and roll into small balls
2) Refrigerate for at least an hour and then enjoy!

🤩 Makes 12 balls; each one has roughly 67 calories, 4G carbs, 5G fat, 2G fiber, 3G protein
