Pav bhaji is a street food dish from India consisting of a thick vegetable curry (bhaji) served with a soft bread roll (pav). It originated in the city of Mumbai. Though Pav bhaji is everyone’s delight but it has loads of butter and comes with a lot of calories.
This is a two part video Series on “Healthy Pav Bhaji Recipe” which you can try at home as a guilt free evening bite.

In this part 1, the bhaji is prepared with sweet potatoes as an alternate to potatoes (limited the number of potatoes) and with minimal usage of butter. Besides, a special home made masala powder has been used to enhance the taste of the dish to the next level.
Healthy Pav Bhaji ( Serves 6 – 8 people)
Prep time – 10 minutes | Cooking time – 30 minutes)
Ingredients for Bhaji

Sweet Potato 1 Big
Potatoes 2 small
Carrots 2 med
Beetroot 1/2 medium
Cauliflower 200 gms
Sweetcorn 100 gms
Capscicum 1 medium
Butter 2 tbsp
Green Chillies 3
Ginger 1 inch
Water 300 ml
Pav bhaji Masala powder 3 tbsp
Beetroot adds a natural color to the Bhaji.
Ingredients for Bhaji Masala

Tomatoes 5 medium
Onion 1 big
Green chillies 1
Ginger 1/2 inch
Red chilli powder 1 tbsp
Coriander powder 2 tsp
Cumin powder 1 tsp
Turmeric powder 1 tsp
Cooking oil 2 tbsp
Salt to Taste
3 tsps of Home Made Masala
Half a Lemon, Chopped Coriander leaves &
half a tbsp butter to garnish

Steps for Bhaji

Take a pressure cooker and place it on to the gas stove
Switch on the flame
Add 2 tbsp of unsalted butter in to the pressure cooker
Once the butter melts, add the finely chopped green chillies and ginger
Fry it for a few seconds
Add all the chopped vegetables one by one in to the pressure cooker
Stir it nicely for a minute or so
Add 3 tablespoons of Pav Bhaji masala to the vegetables and salt to taste
Cook it for 3-4 minutes on high flame so that the spices get well cooked and the vegetables slowly start absorbing the butter
Add 300 ml of water or water enough to cover the vegetables
Close the lid of the pressure cooker.
Cook it till 3 – 4 whistles
Switch off the flame
Once the pressure cooker cools down, open the lid
The vegetables should be properly cooked and should be mashy
Switch on the flame again
Do not close the lid this time
Cook enough to dry up the water left in it
Once the water is evaporated, nicely mash the vegetables
Switch off the flame.
Steps for Bhaji Masala

Finely chop the onions, 3 tomatoes, green chilly and the ginger
Make a puree of another 2 tomatoes
Take a heavy bottom pan and place it on the stove
Switch on the flame and heat it for a few seconds
Add 2 tbsps of refined oil
Add the finely chopped green chilly and ginger to it
Fry it for a few seconds.
Add the finely chopped onions and cook it nicely it gets transparent
Add the chopped tomatoes to it
Now add ,
1 tbsp of red chilli powder
2 tsp of coriander powder
1 tsp of cumin or jeera powder
1 tsp of turmeric powder
Salt to taste
Cover the pan with a lid
Cook the Bhaji masala nicely for 3-4 mins till the tomatoes get soft
Now add the tomato puree to the masala
Cover it with a lid and let it cook for 3-4 minutes.
Add the mashed vegetables in the cooker to the masala and mix well.
Add 3 tsp of “Home Made All Purpose Masala”
Mix it well and squeeze half a lemon
Switch of the flame.
Garnish it with some butter and chopped coriander leaves.
