Ingredients:
4 slices of bread (our suggestion white gluten free bread)
1/2 cup milk (our suggestion unsweetened coconut milk)
5 eggs
1 teaspoon vanilla extract
1/2 teaspoon (dash) ground cinnamon
Butter or 2 tablespoons coconut oil for greasing the pan
Maple syrup and fresh berries for serving (optional)
Instructions:
In a shallow bowl or dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
Place a cast iron skillet over high heat and add a small amount of butter or coconut oil to grease the surface.
Dip each slice of bread into the egg mixture, making sure to coat both sides evenly. Allow any excess mixture to drip off.
Place the coated bread slices onto the preheated skillet. Cook for about 1-2 minutes on each side, or until golden brown and crispy. Cook on medium-high heat.
Once cooked, let toasts sit on the pan for one more minute.
Transfer the French Toast to a serving plate.
