Quinoa is one of my favorite millet that I love to use in my kitchen for various recipes in place of rice. Also, this salad is good for your lunch box, picnics, potlucks, travel, etc.

WHAT IS QUINOA SALAD MADE OF?

This quinoa salad is prepared with fresh ingredients like cucumber, bell peppers, carrot, onion, herbs like cilantro or parsley, and simple lemon-garlic dressing. I have added roasted peanuts as we love the crunch it gives to the salad and adds much-needed protein and healthy fats to your meal. You can skip peanuts and add chickpeas or nuts/seeds like cashews, almonds, walnuts, pumpkin seeds, sunflower seeds, etc.

ARE QUINOA SALADS GOOD FOR YOU?

Quinoa is considered one of the most nutritious and healthiest foods, rich in fiber, antioxidants, and amino acids. It also improves your blood sugar and cholesterol levels and aids in weight loss.

WHAT DO YOU SERVE QUINOA SALAD WITH?
This quinoa salad is a complete vegetarian meal by itself. It is that delicious and filling. You can also pair it with additional protein, including chicken, beef, turkey, shrimp, paneer, or even tofu and Tuna.

IS QUINOA HEALTHIER THAN RICE?
The amount of carbs and calories in quinoa is less than white rice, and it contains more protein and fiber than white rice. So definitely healthy.

1 cup of Red Quinoa
2 cups Water
½ teaspoon Salt

FOR THE QUINOA SALAD
⅓ cup Corn
⅓ cup Red Bell Pepper is my favorite
⅓ cup Chick Peas
⅓ cup Cashew Nuts
⅓ cup Cucumber
⅓ cup Red Beans

Note:

Since I started eating this organic red quinoa, I have noticed that I have lost weight. All my sexy pants can be worn now. Before that, I hadn’t started eating quinoa. My weight was 74.9 kg; now I am 70.1 kg. I recommend you eat quinoa every day; there are a lot of benefits to it. I just started eating quinoa last month.
