Just like me, many of you might have not grown up eating raw banana preparations. In fact, broccoli and zucchini that were enthusiastically sourced and prepared by Baba even in Pune in the 90s were more familiar to me as ingredients than raw bananas, which is a pity, since they’re such a versatile (and, as I’ve recently learnt, an immensely healthy) ingredient to incorporate. I have made stir-fry raw banana sprinkled with sambar-masala, the recipe for which I have already shared, and now we move on to making raw banana cutlets.

Here’s the recipe:
Mash together:
4 small raw bananas / ~ 350 gms, sliced in half and pressure cooked, then peeled
1/2 cup cooked chickpeas
To this, add
2-3 green chilies + 1 inch piece of ginger + salt, finely ground
1 small onion (or half of a medium onion)- finely chopped, mixed in with juice from 1/2 a lime and set aside for some time (I like to do this step while the bananas are pressure-cooking, so they sit in the lime juice for ~30 mins). I do this since it blunts the harshness of raw onions- feel free to skip if this is not a concern for you
1/3 cup packed mint leaves
1/4 tsp packed cumin powder
Mix everything well, shape into patties and shallow fry till golden-brown on each side.
