This dish is inspired by my recent trip to Kolkata. It’s my version of the Baigan Bhaja which is super tasty. I love this one because if guests come over last minute, it takes no time at all to make!

Baigan Bhaja
Ingredients
1 eggplant
1 cup tempura flour
1 tsp red chilli powder
1 tsp chaat masala powder
Water as needed
2-3 ice cubes
1cup hung curd
1 tsp honey
2 tsp coriander leaves, chopped
Oil for frying
Salt
Herb oil for dressing
