High Protein – Nutri Moong Pancake Recipe | Healthy Breakfast Recipe | Moong Recipe
This recipe combines moong dal (green gram) and millet flour to create a high-protein pancake that’s both nutritious and delicious. The moong dal is soaked and blended to form a smooth batter, which is then mixed with Millet flour(any flour), onions, veggies and a touch of baking soda or eno. These pancakes are cooked on a hot griddle until they turn golden brown and crispy on both sides. They make for a wholesome and protein-packed breakfast or snack option. Enjoy them with chutney or yogurt for a satisfying meal.

👉🏼Ingredients:(Serves – 5 pancake (for 3 to 4 people)

Moong/green gram – 1 cup
Ginger – 1 inch, chopped
Green chilli – 1
Cumin seeds/jeera – 1tsp
Water – 1 cup or as needed

Jowar flour/sorghum millet flour – 1/4 cup
Onion – 1/2 cup, finely chopped
Carrot – 1/4 peeled and finely chopped
Beans – 1/2 cup, fined chopped
Capsicum – 1/2 cup, finely chopped
Spring onion – 1/2 cup, finely chopped
Few chopped Coriander leaves
Turmeric powder – 1/2 tsp
Salt to taste
Oil for roasting

👉🏼Procedure:

Soak moong(/green gram/whole moong) overnight
Rinse and drain the water
Transfer to the blender and add ginger, green chilli, cumin seeds and water. Blend to fine paste.
Transfer to a bowl.
Add Jowar flour (Sorghum millet flour). or use any flour like rice flour, wheat flour, ragi flour etc.
Add Turmeric powder and salt. Mix well.
Check the consistency, it should be like thick pouring consistency, add water if needed.

Add finely chopped vegetables as of your choice(Here I used carrot, beans, capsicum, spring onion, onion and coriander leaves)
Mix well. Add eno fruit salt and mix well. or add baking soda. Mix well.
Batter is ready to make the pancake.

Heat the cast iron min pan or any pan of your choice @medium heat
Grease the pan and pour 1 or 2 ladle full of batter(Here I make thick pancake so I used 2 ladle full of batter) Spread it evenly.
Cover and cook for 3 to 5 minutes @ medium low heat. Adjust the heat according to your stove burner size and pan.
Remove the lid. Grease few drops of oil. Flip and cook for 3-4 minutes at medium low heat.
Once both sides are cooked until brownish remove the pancake.
For second pancake -Increase the heat to medium and Pour the batter and reduce the heat to medium low. Follow the cooking process as explained above.

Serve moong pancake/ with chutney or sauce or curd and pickle of your choice.
Serve the Nutri Moong Pancakes(or uthappam) hot with chutney or yogurt or sauce etc
These pancakes are not only high in protein but also delicious. Enjoy your meal!
