RECIPES:
Monday: Egg Bake
– 4 slices bacon
– 1/2 yellow onion
– handful spinach
– handful cherry tomatos
– 6 eggs
Instructions: cook bacon and remove from pan, sauté onion in bacon fat until translucent and add in spinach. Grease a baking pan and add chopped bacon, cooked onion and spinach, and cherry tomatoes (diced), followed by 6 eggs. Mix together. Baked at 425 for 25min (or whenever it looks done)
Tuesday: Avocado Toast
– This one’s pretty self explanatory: sourdough, avocado, fried egg, chili crunch, salt & pep
Wednesday: Yogurt Bowl (my faaaavorite breakfast and snack!)
– greek yogurt (I used vanilla siggis)
– banana
– TBSP peanut butter
– cereal (I used catalina crunch chocolate pb here, but I also LOVE cheerios or rice chex!)
Thursday: Pumpkin Overnight Oats (1 serving)
– 1/2c oats
– 3/4c almond milk
– 1/4c greek yogurt
– 1/4c pumpkin puree
– maple syrup to taste
– dash of vanilla extract
– dash of pumpkin pie spice
– refrigerate overnight!
Friday: Chocolate Banana Cups!
– 3 bananas
– 1/3c of each: peanut butter, coconut flour, maple syrup
– 1tsp baking powder
– Mix-ins of choice (I did chocolate chips and walnuts, but blueberries are also good!)
