*Protein Vanilla Berry Smoothie*
– 1 scoop protein powder, similar
– 1 scoop collagen,
– 1 tsp camu camu,
– 1 tbsp chia seeds
– 1 tbsp almond butter
– 1/2 cup frozen berries
– v1 cup water
My blender is the Vitamix Ascent –

*Berry Crumble*
For the berries:
Approx 4-5 cups frozen / fresh berries of choice (About 400 grams)
1 tablespoon maple syrup (or a handful of chopped dates)
3 tablespoons water
2 teaspoons cinnamon
For the Crumble:
1 cup oats
1/2 cup almond flour or almond meal
1/2 cup chopped almonds, walnuts, or pecans
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup melted coconut oil or butter
1/4 cup pure maple syrup
Instructions
– Preheat oven to 350 F / 180 C.
– In a large bowl, toss the berries with maple syrup (or dates), water, and cinnamon. Pour berries into greased 9×9 or 8×8 inch baking dish.
– In the same (now empty) bowl, add oats, almond flour, nuts, cinnamon, salt, coconut oil and maple syrup. Stir crumble topping together and pour into baking dish on top of berries.
– Bake for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent over-browning.
