In this video, I show 3 healthy meals I had this week and that I’m in love with them. They are full of nutrients, they are easy to make, and take little time.

Each of these cozy healthy meals was made with whole foods and following a balanced diet. That means it includes protein, healthy fats, fiber, and carbohydrates.

HEALTHY MEAL RECIPES:

~Healthy Meal No. 1: Red Lentil Curry with Tofu~

Ingredients:

1 tbsp Coconut oil

1/2 onion cut into squares

1/2 leek cut in squares

1 tbsp Turmeric

1/2 tbsp Ginger

1 tsp Cumin

1 tsp Coriander

1 tsp Cinamon

1 tsp Cayenne Pepper

1 tsp Chili powder

1 Cup of red lentils

2 Cups of water

1/3 Cup Coconut milk

1/2 Cup Tomato paste

1 tbsp Lemon Juice

Salt and Black pepper to taste.

Toppings: Green Onions and Cilantro

Instructions:

1. Rinse the lentils and set aside.
2. Place a pot on the stove and turn on medium heat, add the coconut oil and when it’s hot, add the onions and leeks. Let them brown and add all the spices.
3. When the spices turn slightly brown, add the water and the lentils. Bring to a boil, reduce the heat, and simmer for 15 minutes.
4. Take off the lid and if the water is mostly gone, that means the lentils are ready. If not, let it simmer for another 5 minutes.
5. Once the lentils are ready, add the tomato paste and the coconut milk. Stir continually.
6. Finally, add the lemon juice and let it sit for one minute. Add salt and Black pepper to taste.
7. Serve while is warm and top it with green onions and fresh cilantro.

~Healthy Meal No. 2: Red Snapper with Tomatoes~

Ingredients:

2 medium tomatoes

1 tbsp Olive Oil

1/2 tbsp Balsamic Vinegar

1 tbsp Lemon Juice

1 tsp Dry Thyme and Oregano (you can use fresh if you have it)

1 pound Red Snapper

1 cup rice and peas

1 cup sauté Kale

Instructions:

1. Cut the tomatoes into squares. Add them to a bowl with the olive oil, balsamic vinegar, lemon juice, thyme, and oregano. Add salt and black pepper to taste. Then, set aside.
2. Cut the fish into long pieces and marinate for 10 minutes using the liquid you just made.
3. Cook the fish until is brown.
4. Serve with the tomatoes, the rice, and the sauté Kale or any other leafy green you have in hand.

~Healthy Meal No. 3: Steak Bowl~

Ingredients:

1 Green Onion

1/2 cup Cilantro

1/2 cup Carrots

1 tbsp Dijon Mustard

1 tbsp Coconut aminos

1 tsp Ginger

1 cup Kale

2 6 oz. Steak

1 cup Mushrooms (any type you like)

1/2 cup Chicken Broth

1/2 cup Butter beans.

1 cup mashed potatoes

Salt and black pepper to taste.

Instructions:

1. Cut the green onion, cilantro, and carrots into small pieces.
2. In a bowl mix the Dijon mustard, coconut aminos, and ginger. Then, add the green onions, cilantro, carrots and kale. Mix until the sauce is well blended with the vegetables
3. Cook the steak according to your preference and when both sides are brown take it off the pan and set aside.
4. Cook the mushrooms until they are slightly brown and place on a plate.
5. Add the chicken broth to the pan and the butter beans. When they get a little softer add the veggie mix you made before. Let it cook for 2 more minutes.
6. Serve the steaks with the veggie mix, mushrooms, and mashed potatoes on the side.

These are simple homemade and healthy meals that you can use as inspiration to create your own meals.

All of these are flexible and you can change the protein source or the veggies according to your preferences.

Also, these are great healthy meal ideas for fall and it could be for lunch or dinner. They are full of nutrients and will keep you satisfied for most of the day.
