Ingredients 🥕🥗🥦
3 potatoes, peeled and thinly sliced
3 heads of broccoli, florets trimmed and separated (approximately 1kg/2.2 pounds)
1 onion, sliced
4 cloves of garlic, minced
1 tablespoon of olive oil
Salt and pepper to taste
2 cups of water
2 cups of vegetable stock
1/4 to 1/3 cup of water (for adjusting consistency)
Light thickened cream (to taste, for extra creaminess; can be substituted with vegan cream or omitted)
Optional garnish: extra cream, dill, and small broccoli pieces, cheddar cheese
