Four years ago, I switched to a vegan whole food plant-based diet for those new here and dropped 50 LBS quickly – feeling full, satisfied, and finally healthy! I made sure not to overdo the fats in my diet and centered my meals around starch – The Starch Solution was a BIG part of this change.

Breakfast:
– 1/3 block of crumbled tofu (pressed)
sauteed in a little low-sodium soy sauce, nutritional yeast, and about 1/4 tsp of turmeric.
– Add an oil-free tortilla and a ton of fruit (or veggies if you prefer)

Lunch:
– Chickpea and rice – 1/2 c drained chickpeas, 1 c rice (I use frozen and defrosted), add 1 capful of low sodium soy and nutritional yeast to taste.
