Ingredients
1 cup sourdough starter
1 cup room temperature water
1/4 cup olive oil
3 and 1/2 cups – 4 cups of spelt flour
1/2 teaspoon salt

Method
Combine 1 cup sourdough starter and 1 cup room temperature water.
Add 1/4 cup olive oil, followed by 3 cups of spelt flour and 1/2 teaspoon of salt and the last 1/2 cup of spelt flour.
Knead the dough for about 10 minutes until it comes together.
Remove from the bowl and continue kneading by hand until you achieve the desired texture.
Place the dough into a bread pan, cover, and let it rise for 6-10 hours or until doubled in size.
After rising, preheat your oven to 180°C (356°F) and bake the bread for 35 minutes.
Once baked, allow the bread to cool for 30 minutes before slicing.
