Recipe for Mixed Green Salad with Homemade Balsamic Dressing
Serves:2
Total time: 5 minutes
10 oz. salad greens (romaine, spring mix, arugula, kale etc.) 1⁄4 teaspoon kosher salt
1⁄4 teaspoon black pepper
1⁄4 cup cherry tomatoes
1 green bell pepper, sliced
2 tablespoons nuts (almonds, cashews, peanuts, etc.) 1⁄2 small avocado, sliced
Balsamic Dressing:
1 shallot, rough chopped
1⁄4 cup balsamic vinegar
2 teaspoons Dijon mustard
1⁄4 teaspoon salt
1⁄4 teaspoon black pepper
1⁄2 cup extra virgin olive oil
In a bowl toss all ingredients together except avocados.
In a food processor add shallots, vinegar, mustard, salt and black pepper, pulse for 10 times. Pour oil in a blitz on high for 1 minute.
Toss 1/4 cup dressing in salad and toss to coat evenly. Pour in a bowl or plate and garnish with avocado slices.
Note: Store dressing in an airtight container. Good for 5 days.
