Red Cabbage Salad with Balsamic Vinegar

Ingredients:
1/4 head of red cabbage, sliced thin
2 tbsp salt for massaging the cabbage
Half a bell pepper or any other type of pepper, sliced thin
4-5 green onions, chopped fine
3-4 tbsp olive oil
3/4 tbsp balsamic vinegar
1/2 tsp red pepper flakes
Salt to taste
Splash of lemon juice, optional

Directions:
Start by massaging the sliced cabbage with salt. When the cabbage is wilted and reduced in volume, place it in a large bowl and set aside. Meanwhile slice the pepper and green onions and place in a bowl. Rinse the salt off from the cabbage and squeeze out excess water and combine with peppers and onions. Add olive oil, vinegar, pepper flakes, salt and lemon juice (optional, if you would like a more sour dressing). Mix very well.
